Everyday at dawn, our chef Marc D. Cochon, opens his restaurant and turns his ovens on. Soon the kitchen hums, with the clang of pots and pans, and the scent of fresh baked bread and buns. Marc sautés, chops and scrubs until the last dinner is served, and only when the last dish is cleaned, is this chef’s apron hung. A brilliant culinary creator, Marc’s restaurant is pure theater. Every day he sets the stage, creating new dishes and ways to plate. He is known for his service and amenities, and ingenious combinations and recipes, but runs a kitchen that is pork free, insisting on “no bacon please”!
